The chocolate journey: From cacao farm to chocolate

Join Erica Gilmour, co-owner of Hummingbird Chocolate, and explore the world of cacao farming and its impacts on crafting award-winning chocolate. The presentation will follow the chocolate journey — from the varieties of cacao and where they’re grown to the post-harvest process, as well as how those beautiful beans are turned into chocolate.

Speaker’s bio:

Following careers in international development that took them from Afghanistan to Zimbabwe, Erica and Drew Gilmour started Hummingbird Chocolate in 2012. After working with farmers to improve yields and access new markets, Erica became aware of the challenges that face cacao farmers worldwide. As a life-long chocolate fanatic, she and Drew became intrigued by a new approach of producing craft chocolate on a small scale, using only the finest cacao beans. Based in Almonte, ON, Hummingbird Chocolate has 12 amazing team members and has won 72 international awards in six years.
